storage tip // store washed in a plastic bag in the coldest part of your refrigerator.  keeps for months

  • parsnip and carrot oven fries

5 medium carrots
3 medium parsnips
2 tablespoons olive oil
1/2 teaspoon coarse salt
1/4 teaspoon red pepper flakes
 
Preheat oven to 400 degrees with rack in center of the oven. Wash carrots and parsnips well with vegetable brush.  Cut into 1/4 inch matchsticks. Place in a single layer in a roasting pan and toss with oil, salt, and red pepper flakes.  Turn veggies once.  Roast until crisp and golden brown in places, about 20 minutes.
