zucchini & summer squash
storage tip // store in the warmest part of your refrigerator. will keep for 7-10 days
2 to 3 medium zucchini, yellow or green
1 sweet onion, diced
1 1/2 tbsp olive oil
salt and pepper to taste
Cut stem and bottom off of zucchini. Slice in half lengthwise. Cut into thin half-moon slices. Dice sweet onion. In a medium skillet cook all ingredients over medium heat stirring continuously for 15-20 minutes or until zucchini is completely limp.
