  Three Sisters

pac choi


storage tip // store washed but dry in a greens bag in the coldest part of your refrigerator. keeps for 5-7 days

  • halved pac choi with ginger-soy marinade

1 tsp fresh ginger, peeled and minced
2-3 garlic cloves, minced
1/2 tsp mild hot pepper, minced
2 tsp tamari or soy sauce
1 tsp maple syrup
2 tbsp oil
juice from 1/2 lime
1/8 cup water
2 baby pac choi, halved or quartered
Wash pac choi as thouroughly as possible, being sure to get the dirt out of the nooks and crannies.  In a large skillet saute garlic, hot pepper, and ginger in oil for 1 minute over medium heat.  Add soy sauce, lime juice & maple syrup and stir for another minute.  Add water to skillet and place pac choi halves in pan cut side down.  Cover skillet with a large lid so that the steam from the water can lightly cook the pac choi.  Monitor the pac choi, flipping once or twice.  Cook until the greens are tender and bright green, 4-7 minutes.  Arrange two halves on a plate and top with your choice of cooked, chicken or duck breast or fillet of fish. This recipe is designed for a meal for two.  Be sure to drizzle all the good marinade that is left in the pan over the meat.  For vegetarians, we also think it would be good topped with a scoop of rice.
